So, the interesting thing about this video is that Michael uses a microwave and not water to cook his root vegetables. Michael does show an immersion circulator, but does not demonstrate one. Via twitter, I know that Michael has received an SVS for evaluation purposes. I'm curious if this video was produced before he received his SVS or if he's decided he didn't want to include it. I've got to think he'd prefer an SVS over a microwave.
